I got this at the fish market yesterday to cook for my son, Charlie. I dress it with a little soy sauce and lemon juice – he loves it (including the crispy skin).
Kimchi
Always in my fridge for snacking, eating with steak or rice, and adding to soups or stews. I have a great recipe for tomato-kimchi soup with rice in Something from Nothing, which is reason enough to keep it on hand. I explore different varieties, but tend to just love the classic napa cabbage variety. I always drink the liquid after and save the jar as a leftovers container – the gift that keeps on giving!

While virologists and public health departments were palpitating over the news of an Andes virus infectious disease outbreak on a cruise ship (13 cases, three deaths), in the Democratic Republic of the Congo the Bundibugyo virus, the root of the current Ebola outbreak (currently more than 1,250 cases and at least 362 deaths), was smouldering under the radar.
Bundibugyo virus is a horrifying, highly fatal pathogen. Symptom onset is sudden and includes headaches, diarrhoea, malfunctioning kidneys and liver, and, less frequently, internal and external bleeding (hence the term “haemorrhagic disease”). Grimly, contagiousness remains after death, meaning the family and loved ones of the deceased can be exposed when they wash and clothe the body in preparation for the funeral.

Os três países-sede da Copa do Mundo estão garantidos nas oitavas de final. Depois de Canadá e México, foi a vez dos Estados Unidos confirmarem a classificação com vitória por 2 a 0 sobre a Bósnia. A partida contou com um trio de arbitragem brasileiro, que teve bastante trabalho ao longo dos 90 minutos.
O adversário dos norte-americanos na próxima fase será a Bélgica. Em um dos jogos mais emocionantes do mata-mata até agora, os belgas venceram Senegal por 3 a 2, de virada. A seleção africana chegou a abrir 2 a 0 e sustentou a vantagem até os 41 minutos do segundo tempo, mas a Bélgica reagiu e virou o placar. O gol da classificação saiu nos acréscimos, em cobrança de pênalti marcada após revisão do VAR.
A Inglaterra também confirmou presença nas oitavas, mas precisou buscar a virada diante da República Democrática do Congo. A vitória por 2 a 1 teve como destaque Harry Kane, que marcou mais uma vez e ultrapassou Pelé na lista de maiores artilheiros da história das Copas do Mundo.
